Over three weeks ago I went vegan. I must say it was easier than I thought. My health is already improving. I’ve always been a foodie into organics, so it was just a matter of making a few adjustments. So here’s a some yummy pictures and descriptions of my favorite things to eat currently. No recipes. Real cooks rarely use those.
First up, hummus plate deluxe for lunch. A foundation of spelt bread and hummus topped with cucumber, tomato, olive and carrots with some melon and strawberry. For a snack I make a mini version.
For dinner I had my first try at Thai coconut curry soup. Got my ingredients together
Tamarind, lime juice, coconut milk, coconut oil, turmeric, curry, chilli, hoisin, cayenne, galangal, ginger, onion, basil, garlic, bok choy, broccoli, tomato, bell pepper and cilantro. That celery in the background is happy to be in water and not this recipe.
I sautéed the onion garlic pepper and tomato in olive oil covered with water added the rest of the ingredients, a pinch of cayenne and basil about a tsp of each seasoning a piece of galangal and ginger tablespoon or two of tamari lime and hoisin
It turned out good. Served over brown rice with a side of kimchi, that’s dinner.
Another thing I was excited to make was vegan potato salad. The secret ingredient is black salt that tastes like eggs. I used multi colored fingerlings, carrot, celery, purple onion, stone ground mustard, evoo, apple cider vinegar, dill, black pepper, black salt, a dash of hot sauce and fresh green onion grown on my patio.
Celery, green onion, garlic and potatoes. I cook with them so much, may as well grow some!
I hope you enjoyed my favorite things to eat currently, now that I’m veganish.
